Salmon En Croute with a Prosecco & Saffron Sauce
- 600g salmon
- handful of watercress
- tub of garlic & herb philadelphia cheese
- 1 shallot, diced
- 1 tbsp double cream
- 1 tbsp lemon juice
- sprinkle of dill
- sprinkle of parsley
- 3 chives, chopped
- salt & pepper
- 1 pack puff pastry
Prosecco & saffron sauce
- olive oil
- 2 shallots, diced
- glass of prosecco, hic!!
- 150ml chicken stock
- 150ml double cream
- pinch of saffron
- salt & pepper
- knob of butter
