Seriously Cheesy Cheese & Potato Pie

1. Boil 10 potatoes with 1 diced yellow onion, 3 diced shallots & 4 bay leaves.
2. Meanwhile grate 100g parmesan, 200g cheddar, 100g brie (or any other soft cheese)
3. Once the potatoes are boiled, strain and mash with the cheese, add 1 tsp of english mustard & 1 tsp rock salt.
4. Once mashed turn into an ovenproof dish.
5. Top with some extra grated cheese... yum!!
6. Here's a twist, I had some serrano ham leftover, so I twisted some on the top to create a wheel shape, then popped sliced tomatoes in between.
7. Then sprinkle with herbs, I've used oregano & basil, then a touch of black pepper.
8. Cook for half an hour at 180 degrees & serve with your favourite things x
